BBQ Elk Kabobs

What you will need to make your Kabobs.

Kabob Skewers, preferably metal.

Elk back strap or tenderloin preferably, but any cut will work.

Apple Cider.

BBQ Sauce

Any combination of red, yellow or green bell peppers.

Cloves of garlic.

Red or yellow onion or both.

Thick cut smoked bacon.

Preparation.

Marinade your elk chunks in apple cider for 12 hours. Then marinade in your favorite BBQ sauce for another 12 hours. Skewer the elk chunks with a garlic clove on either side of the meat followed by your thick bacon slices in accordion style then your bell pepper and your onion and repeat down the skewer in that order. BBQ on medium heat and serve meat medium rare and with veggies perfectly roasted.
