Ground Pheasant Lettuce Wrap 

Ingredients
1 tablespoon olive oil
1 pound ground chicken, turkey or pheasant
2 cloves garlic, minced
1/2 large onion, diced
1/4 cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon rice vinegar
1/2 tablespoon freshly grated ginger
1/2 teaspoon sriracha sauce, more if to taste
1 (8 ounce) can whole water chestnuts, drained and diced
2 green onions, thinly sliced
Kosher salt and ground pepper, to taste
1 head lettuce

Instructions
Heat olive oil in sauce pan over medium heat, brown ground meat, crumbling meat as it cooks. Drain excess fat.
Stir in garlic, onion, hoisin sauce, soy sauce, vinegar, ginger and sriracha until onions are translucent, about 1-2 minutes. Stir in chestnuts and green onions until tender, about 1-2 minutes season with salt and pepper to taste.
Take a lettuce leaf and wrap the meat and enjoy, yields 4 servings. I like to double the recipe so I will have enough for left overs.
